Our products are not simply made, they are crafted, with the minimum use of machinery and with traditional ways of proofing, scoring, shaping and baking. When it comes to baking, leaving the dough to rise and relax naturally is crucial. This does not happen only with the proofing and pre-ferment but also with other ways during the bread-making process. Therefore we manage to allow our dough to get the needed rest throughout its journey before becoming our delicious baking product.
